Mexican Corn Salad


This is a refreshing dish on a hot summer day!

What You Need:
  • 1.5 cups sweet corn (de-cobbed)
  • 1/2 cup chopped red onion
  • 1 red pepper, seeded and diced
  • 1 tomato, seeded and diced
  • 1/2 cup chopped cilantro
  • 2 Tbl rice vinegar
  • 2 Tbl apple cider vinegar
  • 1 Tbl lime juice
  • 1 tsp cumin
  • 1 tsp corriander
  • 1/4 tsp cayenne
What You Do:
  • Combine corn, onion, bell pepper, tomato and cilantro
  • In small bowl combine vinegars, lime juice, and spices
  • Pour dressing over salad and toss gently. Enjoy!
